A yummy starter for Burns Night
4 large flat mushrooms (thin based rather than too thick)
1 garlic clove, finely chopped
250g regular haggis, crumbled up
2tbsp coriander leaves, freshly chopped
1-2 tbsp extra virgin oil
1tbsp parmesan cheese, grated
Remove the stalks from each mushroom, place into snug fitting ovenproof dish
Mix the garlic, haggis and coriander, pile into each mushroom, drizzle with 1 tbsp oil then top with cheese and drizzle slowly with a little more oil
Heat the oven and bake mushrooms for 25-30 mins until tender
Serve with good bread
Or you could make a whisky sauce with cream and whisky…….amount as required…….heat the cream until it boils then add the whisky and drizzle over mushrooms
